Whoopie Pies
Old Fashioned Maine Whoopie Pies (double batch)

Cookies: 3 cups sugar,1/2 cup shortening (creamed together) Then add, 1 cup cocoa, 2 eggs, 1 1/2 cups buttermilk, 1 teas. cream of tarter, 1 teas. soda, salt and vanilla. Mix well and gradually add 4 cups flour. Filling: 5 tablespoons flour and 1 cup milk (cook in double boiler until thick). Let cool to cold. Add 1 cup shortening, pinch of salt, and whip it. Add 1 cup sugar and some vanilla, whip it again.

Drop Cookies by teaspoonfuls Bake 375 degrees about 10 minutes. When cookies are done, and filling is made, put filling between two cookies, and wrap individually.
