Lemon Filled Blueberry Muffins
Number of Servings: 12

6 Cups flour, 1 Cup sugar, 3 Tbsp baking powder, 1 tsp salt, 3 whole eggs, 3/4 Cup vegetable oil, 2 Cups Maine Wild Blueberries, 1 can lemon pie filling

Mix dry ingredients. Beat 3 eggs, add milk and oil, add blueberries. Pour liquid mixture into dry ingredients and mix until moist. Spray large muffin tins with food release spray and fill half full with muffin mix. Add a tablespoon of lemon pie filling, then top with muffin mix. Sprinkle with cinnamon and sugar.
